Thai Cucumber Salad

Ingredients
- - 2 cucumbers, thinly sliced
- - 1/4 cup chopped red onion
- - 1/4 cup chopped fresh cilantro
- - 1/4 cup chopped peanuts
- - 1/4 cup rice vinegar
- - 2 tablespoons soy sauce
- - 1 tablespoon sugar
- - 1 teaspoon sesame oil
- - 1/2 teaspoon red pepper flakes
- - Salt and pepper to taste
Directions
- 1. In a large bowl, combine the sliced cucumbers, chopped red onion, and chopped cilantro.
- 2. In a separate small bowl, whisk together the rice vinegar, soy sauce, sugar, sesame oil, red pepper flakes, salt, and pepper.
- 3. Pour the dressing over the cucumber mixture and toss to coat evenly.
- 4. Refrigerate the salad for at least 30 minutes to allow the flavors to meld together.
- 5. Before serving, sprinkle the chopped peanuts on top for added crunch.
