Thai Cucumber Salad

Ingredients

  • - 2 cucumbers, thinly sliced
  • - 1/4 cup chopped red onion
  • - 1/4 cup chopped fresh cilantro
  • - 1/4 cup chopped peanuts
  • - 1/4 cup rice vinegar
  • - 2 tablespoons soy sauce
  • - 1 tablespoon sugar
  • - 1 teaspoon sesame oil
  • - 1/2 teaspoon red pepper flakes
  • - Salt and pepper to taste

Directions

  1. 1. In a large bowl, combine the sliced cucumbers, chopped red onion, and chopped cilantro.
  2. 2. In a separate small bowl, whisk together the rice vinegar, soy sauce, sugar, sesame oil, red pepper flakes, salt, and pepper.
  3. 3. Pour the dressing over the cucumber mixture and toss to coat evenly.
  4. 4. Refrigerate the salad for at least 30 minutes to allow the flavors to meld together.
  5. 5. Before serving, sprinkle the chopped peanuts on top for added crunch.
