Bay Scallops

Ingredients

  • - 1 pound bay scallops
  • - 2 tablespoons olive oil
  • - 2 cloves garlic, minced
  • - 1/4 cup white wine
  • - 2 tablespoons lemon juice
  • - 2 tablespoons fresh parsley, chopped
  • - Salt and pepper to taste

Directions

  1. 1. Rinse the bay scallops and pat them dry with paper towels.
  2. 2. In a large skillet, heat the olive oil over medium-high heat.
  3. 3. Add the minced garlic and sauté for about 1 minute until fragrant.
  4. 4. Add the scallops to the skillet and cook for about 2-3 minutes on each side until they are opaque and slightly browned.
  5. 5. Pour in the white wine and lemon juice, scraping any browned bits from the bottom of the skillet.
  6. 6. Cook for another 2-3 minutes until the liquid has reduced slightly.
  7. 7. Season with salt and pepper to taste.
  8. 8. Remove from heat and sprinkle with chopped parsley before serving.
  9. 9. Serve the bay scallops hot as an appetizer or over pasta for a main dish. Enjoy!
