Bay Scallops

Ingredients
- - 1 pound bay scallops
- - 2 tablespoons olive oil
- - 2 cloves garlic, minced
- - 1/4 cup white wine
- - 2 tablespoons lemon juice
- - 2 tablespoons fresh parsley, chopped
- - Salt and pepper to taste
Directions
- 1. Rinse the bay scallops and pat them dry with paper towels.
- 2. In a large skillet, heat the olive oil over medium-high heat.
- 3. Add the minced garlic and sauté for about 1 minute until fragrant.
- 4. Add the scallops to the skillet and cook for about 2-3 minutes on each side until they are opaque and slightly browned.
- 5. Pour in the white wine and lemon juice, scraping any browned bits from the bottom of the skillet.
- 6. Cook for another 2-3 minutes until the liquid has reduced slightly.
- 7. Season with salt and pepper to taste.
- 8. Remove from heat and sprinkle with chopped parsley before serving.
- 9. Serve the bay scallops hot as an appetizer or over pasta for a main dish. Enjoy!
