Drunken Chicken

Ingredients

  • - 1 whole chicken, cut into 8 pieces
  • - 2 cups red wine
  • - 1 cup chicken broth
  • - 2 tablespoons olive oil
  • - 2 cloves garlic, minced
  • - 1 teaspoon dried thyme
  • - 1 teaspoon dried oregano
  • - Salt and pepper to taste

Directions

  1. 1. Preheat oven to 375 degrees F.
  2. 2. In a large bowl, combine the red wine, chicken broth, olive oil, garlic, thyme, oregano, salt and pepper.
  3. 3. Place the chicken pieces in the bowl and coat with the marinade. Cover and refrigerate for at least 1 hour.
  4. 4. Place the chicken pieces in a large baking dish. Pour the marinade over the chicken.
  5. 5. Bake for 45 minutes or until the chicken is cooked through and the juices run clear.
  6. 6. Serve warm. Enjoy!
